Don Francesco Artisan Salumificio

Salumificio Don Francesco is an artisanal cured meat production company which is based and operates in Stigliano, a municipality in Basilicata in the Province of Matera.

Founded in 1969, the company boasted the Don Francesco brand in 2008 to characterize its products on the market, taking maximum care of their quality and food safety.

The production process starts from the selection of the quality of pork coming only from local farms.

The farms are conducted in an uncontaminated territory with pigs that spend most of their lives free to graze to ensure maximum animal welfare. Among the breeds raised there is also the famous Lucanian black pig.

All cured meats are prepared in an artisanal way according to the Lucanian tradition, in particular from Stigliano. The cured meats contain selected pork and black Lucanian pigs, raised on pasture and contain no colourings, preservatives or milk derivatives.

Salumificio Don Francesco has become a Slow Food presidium through the care with which it produces typical Lucanian cured meats. The company's artisan tradition is one of the oldest in the area and represents an excellence of Lucanian gastronomy.
