Large and colorful Purple crown beans are “hard, soft-skinned” beans. Maxi in size, they have a sweetish flavor and a consistency similar to that of borlotti beans. Excellent in soups, veloutés, spreads or combined with other legumes to make vegetable burgers. But you will also appreciate them alone with a drizzle of oil.
