CANTONOVO 2019 - ORGANIC Primitivo IGP Puglia
Cantonovo is the most authentic expression of the Murgia hills of Bari, poised between the Adriatic Sea and the Ionian Sea. From respect for nature, which characterizes an organic wine, to the vinous aromas of a persuasive red. The freshness of the red fruits conquers at the first sip. The name celebrates the cycle of nature evoked by the four seasons which give their names to the same number of chapters of the Canto Novo Dannunziano.
Year of planting: replanted in 1990 where there had been a vineyard since the early 1900s
Harvest: in the first half of September the grapes are harvested by hand in boxes with a careful selection of the bunches
Vinification: with an innovative technique that involves carbonic maceration for approximately 10 days. At the end of this phase, it is completed with the pressing of the grapes and any residual sugar is left to be transformed into alcohol in the conventional way. All at a controlled temperature
Aging: takes place in steel for approximately 4-6 months and then in the bottle
Annual production: approximately 30,000 bottles
Serving temperature: 18 - 20° C

TASTING NOTES
Color: purplish red, bright and persuasive
Bouquet: vinous, medium intense, quite persistent, which attracts attention due to the large collection of red fruits that are expressed in their freshness
Taste: in the mouth the sip is pleasantly soft, the tannin is persuasive, the acidity gives the right freshness. Confirms the red fruits on the palate
Food pairing: delicious with red meats, cheeses, legume soups, broad beans and chicory, orecchiette and turnip tops
Aging capacity: up to 10 years if stored correctly
