It comes in cylindrical shapes weighing approximately 3 kg. It needs a minimum of four months of maturation before being placed on the market. A longer maturation accentuates its characteristics.

Curiosity
Among the oldest cheeses of the Italian dairy tradition, already known in the 4th century. BC The oenotrians, shepherds and farmers, transformed the milk into typical rush baskets from which the name derives. The production area includes several municipalities including Pomarico and Ferrandina (MT), in which the Azienda Agricola Cavalli falls, and internal marginal areas (Lucania hinterland) with gully pastures exploitable only by sheep and goats.

CANESTRATO DI MOLITERNO PGI

Hard cheese produced with sheep and goat's milk, as required by the regulations which also include animal breeds and grazing areas. Goat's milk is expected in a percentage between 10% and 30%.
The Cavalli agricultural company produces Canestrato with the milk of its own animals (Comisan sheep and Syrian goats) in the company dairy. The ingredients are: sheep's milk, goat's milk, lactic ferments, rennet and salt, nothing different, the specification is mandatory on the list of ingredients.: The ferments are native and the rennets are either kid or lamb.
We process thermised and raw milk.
The specification requires that the product be in the company for 40 days. from the date of production, then it must leave for Moliterno where it ages in the warehouses for at least 60 days. after which, branding can be requested.
The Protection Consortium brands the forms it deems suitable for Canestrato.

The specification does not formally explain the minimum and maximum maturing time, but if we calculate the obligatory 40 days of maturing at the manufacturing company and the obligatory 60 days at the Moliterno warehouse and considering the times for requesting branding, the canestrato it is placed on the market no earlier than four months of maturation.

The product is packaged in whole wheels or portions (whole wheels weigh around 2.6 kg. Initially the wheel weighs 3 kg) vacuum-packed or in vegetable paper, according to the customer's requests.
