The bread traditionally produced in Matera is made only with re-milled durum wheat semolina through an artisanal process. It is characterized by the yellow color of the crumb and the brown, thick and crunchy crust. It has a high porosity with honeycomb dimensions ranging from a few millimeters to several centimeters. It is a bread with an unmistakable smell and flavour, it comes in sizes of 1/4, 1/2, 1 and 2 kg, in a croissant shape or in the panelle shape, also called tall bread.
