In order to preserve all the nutritional characteristics present in the wheat grain, our wholemeal semolina is processed directly in the stone mill. This is the only way to keep the germ unchanged, rich in antioxidant properties and with a high nutritional profile, together with all the other parts of the grain that we can find in semolina. The slow rotation of the stone millstones protects its characteristics without denaturing the protein content.
