Honeydew is a sugary secretion produced by insects that feed on the sap of various plants. Bees collect this substance and transform it into honey. It is collected in the forests of the Matera area in July and August. The colour varies from very dark to almost black. It recalls the scent of wood and resin and has a pleasant, slightly sweet flavour. It goes very well with smoked and mature cheeses

Colour: very dark amber to almost black

Smell: strongly aromatic, woody, resinous

Taste: pleasant, slightly sweet and slightly acid

Aroma: of panna cotta, caramel

Crystallisation: liquid, generally very viscous

Combinations : goes very well with smoked or mature cheeses, in infusions and decoctions
