The bread traditionally produced in Matera is made only with remilled durum wheat semolina through an artisanal process. It is characterised by the yellow colour of the crumb and a thick, crisp, brown crust. It has a high porosity with the size of the alveolation varying from a few millimetres to several centimetres. It is a bread with an unmistakable smell and taste, and comes in 1/4, 1/2, 1 and 2 kg loaves, in the cornetto shape or in the panella shape, also known as high bread
