ORIGINS OF THE PRODUCT AND PROCESSING
Oil of Italian origin obtained from selected olives from the Ruvo di Puglia countryside and neighboring municipalities, certified according to the Sidel Spa Certification and Inspection Body. The transformed olive variety is the Coratina and the harvest takes place at the right moment of maturation by the end December.
APPEARANCE AND ORGANOLEPTIC PROFILE
COLOR: olive green with yellow shades.
SMELL: fruity of green olive, enriched with herbaceous, artichoke and almond notes.
TASTE: harmonious, balanced and fruity taste, with light bitter and spicy notes.
Fruity aftertaste of clear olive, almondy with herbaceous hints.
PRODUCT PROCESSING METHODS
The extraction takes place cold, with controlled temperatures below 27° degrees, preserving all the organoleptic properties and chemical-physical characteristics of the oil, avoiding possible oxidation of the same.

COMBINATIONS
It can be used to enhance all dishes with medium and intense flavours, without altering their taste.
When raw, it enriches the taste of legumes, white meats, carpaccio, bresaola, salads, vegetables and bruschetta.
When cooking, it is ideal for the preparation of sauces and ragù, roast and grilled meat, as well as for giving desserts a unique and easily digestible flavour.
MINIMUM SHELF LIFE
To be consumed preferably within 18 months from the packaging date.
