Persino il poeta latino Orazio, nelle sue “Satire” (37 A.C), scrisse del pane di Altamura, così gustoso e apprezzato dai viaggiatori dell’epoca, che erano soliti portarselo dietro nei loro spostamenti, visto che poteva durare anche due settimane. In passato i nostri contadini e pastori facevano grandi scorte di pane casereccio quando, a causa del lavoro nei campi o nei pascoli, sapevano di dover trascorrere intere settimane lontani da casa, spesso in masserie sperdute sulle colline della Murgia. In un antico statuto della città, risalente al 1527, numerosi paragrafi sono dedicati ai “doveri” dei fornai, nonché alle tasse che erano tenuti a versare alle autorità.\u003cbr\u003e\u003c\/p\u003e\u003cp\u003eLa ricetta originale è stata tramandata di generazione in generazione, da madre in figlia. Le donne impastavano il pane a casa, ma andavano ad infornarlo presso i forni a legna pubblici. Per evitare che si confondesse con le altre, ciascuna pagnotta veniva marchiata con le iniziali del proprietario, “il capofamiglia”, che erano riportate su un timbro di ferro. Era il fornaio stesso che provvedeva poi a distribuire le forme di pane, trasportate su un lungo asse di legno, alle rispettive massaie, alle quali annunciava la consegna chiamandole a gran voce dalla strada. Persino il poeta latino Orazio, nelle sue “Satire” (37 A.C), scrisse del pane di Altamura, così gustoso e apprezzato dai viaggiatori dell’epoca, che erano soliti portarselo dietro nei loro spostamenti, visto che poteva durare anche due settimane. In passato i nostri contadini e pastori facevano grandi scorte di pane casereccio quando, a causa del lavoro nei campi o nei pascoli, sapevano di dover trascorrere intere settimane lontani da casa, spesso in masserie sperdute sulle colline della Murgia. In un antico statuto della città, risalente al 1527, numerosi paragrafi sono dedicati ai “doveri” dei fornai, nonché alle tasse che erano tenuti a versare alle autorità.\u003cbr\u003e\u003c\/p\u003e\u003cp\u003eLa ricetta originale è stata tramandata di generazione in generazione, da madre in figlia. Le donne impastavano il pane a casa, ma andavano ad infornarlo presso i forni a legna pubblici. Per evitare che si confondesse con le altre, ciascuna pagnotta veniva marchiata con le iniziali del proprietario, “il capofamiglia”, che erano riportate su un timbro di ferro. Era il fornaio stesso che provvedeva poi a distribuire le forme di pane, trasportate su un lungo asse di legno, alle rispettive massaie, alle quali annunciava la consegna chiamandole a gran voce dalla strada. Persino il poeta latino Orazio, nelle sue “Satire” (37 A.C), scrisse del pane di Altamura, così gustoso e apprezzato dai viaggiatori dell’epoca, che erano soliti portarselo dietro nei loro spostamenti, visto che poteva durare anche due settimane. In passato i nostri contadini e pastori facevano grandi scorte di pane casereccio quando, a causa del lavoro nei campi o nei pascoli, sapevano di dover trascorrere intere settimane lontani da casa, spesso in masserie sperdute sulle colline della Murgia. In un antico statuto della città, risalente al 1527, numerosi paragrafi sono dedicati ai “doveri” dei fornai, nonché alle tasse che erano tenuti a versare alle autorità.\u003cbr\u003e\u003c\/p\u003e\u003cp\u003eLa ricetta originale è stata tramandata di generazione in generazione, da madre in figlia. Le donne impastavano il pane a casa, ma andavano ad infornarlo presso i forni a legna pubblici. Per evitare che si confondesse con le altre, ciascuna pagnotta veniva marchiata con le iniziali del proprietario, “il capofamiglia”, che erano riportate su un timbro di ferro. Era il fornaio stesso che provvedeva poi a distribuire le forme di pane, trasportate su un lungo asse di legno, alle rispettive massaie, alle quali annunciava la consegna chiamandole a gran voce dalla strada.
